Agar is a sea dao algae extract which is made from cauliflower or jiangduli (genus red algae) after being heated to dissolve and then cooled and solidified. Guan Zhuan is rich in dietary shu fiber (content is 80.9%), high in protein, low in calories, and has detoxification and beauty, purging fire, moisturizing intestines, lowering blood pressure, lowering blood sugar and preventing cancer. It is recognized by the UN Food and Agriculture Organization as 21 Century health food.
Agar is a mixture of a neutral, dominating polysaccharide called “Agarose” and a charged polymer called “Agaropectin”. The agarose is composed of (1-4) linked 3,6-anhydro -a- – μεγάλο – galactose alternating with (1-3) linked – σι – ρε – galactose.
