In the past, soy sauce producers invested in techniques to produce large quantities quickly. By heating the mash to ferment at the optimal temperature and adding cultivated yeast, they succeeded in reducing the brewing time by six months over traditional methods, and greatly reduced the cost of soy sauce. Along with the creation of the current demand for soy sauce in overseas markets, we believe this to be a major contribution.
Sin embargo, we continue to follow the traditional natural brewing method in which the soy sauce is fermented by the different probiotic microbes that live in the brewery as the temperature changes with the seasons. This is because we believe that truly authentic soy sauce is produced by the optimal microbes for the environment as a result of their own natural metabolic rhythms.
The yeast produced by the “ancestors” living on the brewery walls and in the tanks imparts a well-rounded flavor to the soy sauce. As the name suggests, it takes time for the effects of ripening yeast to appear, continuing fermentation after the soy sauce matures. With extended aging, the color darkens with an increase in the concentration of melanoidin, a biologically active compound in miso paste and soy sauce with high free radical scavenging activity.
If Japanese cuisine is the source of the longevity of Japanese people, then the miso paste and soy sauce which are such an important part of Japanese cooking must be in harmony with the body.”
