“Traditional Natural Brewing Technique
בעבר, soy sauce producers invested in techniques to produce large quantities quickly. By heating the mash to ferment at the optimal temperature and adding cultivated yeast, they succeeded in reducing the brewing time by six months over traditional methods, and greatly reduced the cost of soy sauce. Along with the creation of the current demand for soy sauce in overseas markets, we believe this to be a major contribution.
